Lemon Blueberry Freeze
In a large bowl, combine cream and sugar. Stir until sugar is dissolved
Blend in lemon rind and juice (mixture will thicken slightly)
Pour into 13 x 9 pan and freeze until slightly firm (about 30 minutes), stirring occasionally
Remove from freezer and drop spoonfuls of blueberry sauce over cream mixture
Using a knife, swirl the blueberry and cream mixtures together
Cover and freeze until firm (about 4 hours)
To serve, cut into squares.
This recipe makes approx 8 - 10 servings.
Preparation time: 10 minutes
Freezing time: 4 1/2 hours
Blueberry Sauce
Mix sugar and cornstarch, blend well
Add water, cinnamon, and blueberries
Place over medium heat and cook, stirring until thickened
Add lemon juice and let cool.
