Blueberry Oat Muffins

• 2 cups quick cooking rolled oats
• 2 cups sour milk (1/4 cup lemon juice & 1 3/4 cups milk)
• 2 cups flour
• 2 tsp baking powder
• 1 tsp baking soda
• 1 tsp salt
• 1 1/2 cups brown sugar
• 2 eggs beaten
• 1/2 cup cooking oil
• 1 can blueberry pie filling or blueberry glaze recipe (see below for recipe)

Mix oats and sour milk. Let stand

Combine flour, baking powder, baking soda, salt and brown sugar, mix together

Add eggs and oil to oat mixture and mix well

Add flour mixture all at once to oat mixture

Stir just to moisten

Fill muffin cups 1/3 full

Add teaspoon of blueberry glaze and fill remaining muffin cup with batter

Bake at 400F for 15 - 20 minutes

Makes approx. 2 dozen muffins

Kustermans' Blueberry Glaze

• 1 cup sugar
• 2 Tbsp. Cornstarch
• 1 cup water
• 1/2 tsp. cinnamon
• 1/4 cup Kustermans' blueberries
• 1 tbsp. lemon juice
• 2 cups Kustermans' blueberries

Mix sugar and cornstarch. Blend well.

Add water, cinnamon and 1/4 cup of Kustermans' blueberries

Place over medium heat and cook, stirring until thickened

Add lemon juice and the 2 cups of Kustermans' blueberries
